
FINCA SAN RAFAEL

Finca San Rafael is located in the heart of the Colombian coffee belt on the top of Belalcázar municipality. The average altitude is 1600 masl and it has a special micro-climate influenced by the Cauca valley and the western Andes Mountain range.
As an experiment we added fruit & spices to this anaerobic fermentation and we are very happy with the end result. This anaerobic fermented coffee is balanced and very clean, with great clear acidity and great fragrance. We collected the red cherries, checked for floaters and reselected the cherries to make sure we only had the red cherries. With two different fermentations, this coffee became very balanced; we fermented all the bags with the fruits & spices for the first days right after selecting, after the PH reached the right value, we pulped half the number of cherries and added different fruits & spices and did the same with the other part without pulping the cherries. This outstanding different coffee is definitely a must try!
